Willkommen!
2019 was the first year I stepped foot on German soil, and I can assure you it was nothing short of life-changing. Just like when I staged in France, I lived above the bakery in Germany-this time, however, it was with the family that owned the bakery and all of their bakers. We shot film together, baked together, laughed, hiked, went thrifting, explored Nürnberg, shared stories and drank plenty of glühwein. Every day we’d gather for lunch at Oma’s apartment downstairs, and every day we cooked dinner together in our shared kitchen. Sunday mornings were for family gatherings, and in the weekday evenings we’d don our matching bakery t-shirts while lifting the heaviest sets of bread in and out of the ovens. I’ll always remember looking at the (extremely) long wooden peel with about 30-40 tins of heavy rye bread thinking I wouldn’t be able to lift it into the top deck of the oven, and hearing the words “you can do it, you’re stronger than you think you are”. It would be silly to say that I simply learned just some German floured tricks of the trade in that small village. I learned how to be a better human, how to be more open with those around me, how to make proper rye bread, how to speak a bit of German, that I certainly didn’t need so many socks while traveling, and so much more. This menu is inspired by my travels, my friends, and the little moments spent hiking through northern Bavaria with freshly baked goods tucked away in my bag. For Oktoberfest, for my friends turned family outside Nürnberg. Prost!

Respectively named after the village where I studied, this is our 100% naturally leavened (aka sourdough) classic rye that is 100% inspired by my stage.
The English translation of this tasty rye is ‘land spice’. I didn’t know I would love this particular bread so much during my stage at the bakery. It was always one I wanted to thinly slice and top with vegetables and the vegan pesto a family friend brought in from the city (or others would top with meat and cheese).
100% naturally leavened rye bread with fennel, coriander, cumin.
Our beloved bratwurst and gouda croissant complete with stone ground mustard.

Think of a proper krautstrudel, but in a croissant version. Sauerkraut, thinly sliced potato, german spices, a bit of cheese and the slightest hint of beer.
10/10, we recommmend.

This you’ll only find at the bakery I staged at-it’s their creation!! I was lucky enough to have them more than once (I still dream about them), so with a little help from my friends in Germany-they are here for you to try during this special Oktoberfest weekend.

With the lightest glaze over these German crullers, they are something delicate I often miss.

Kind of like a cross between a tart and a cake, these nut bars are heavenly. They have a tart-like crust, red currant jam, and are topped with nut filling. This was one of my absolute favorites to take on hikes through our village! Not too sweet or heavy, 10/10.

Oma’s special cookies that are *technically* for holidays. I was lucky enough to stage post holidays, so I was stealing away these cookies every chance I could get and hiding/rationing them in my room (I was in love with them, what can I say). By the dozen.

Our Kouign Amann filled with a velvety vanilla bean crème pâtissèrie and rosehip jam. An ode to Northern Bavaria where rose hip jam is beloved.
